Description of the wine:
Our Cabernet Sauvignon Perfect Choice 2015 is an outstanding wine resulting from the collision of ancient tradition and modern technology. Aged for 12 months in four different types of oak barrels (French, American, Hungarian, Macedonian) each of which has different flavoring properties that are combined to produce a wine with unique flavor profile. It is a symphony of aromas featuring vanilla, cocoa and black plum jam, which are characteristic of our fruit forward taste and smooth finish
Food pairing:
We recommend that the wine be consumed at room temperature in combination with red meat, and for fans of experiments we suggest it combination with traditional Asian dishes.

Total acids: 5.7 grams per liter
Sugars: 1 gram per liter
Alcohol: 13 % vol.
Harvest:
The moderately rainy winter was followed by a warm spring, which created ideal conditions for an early start to the 2014 season. Rainfall was in normal quantities and evenly distributed throughout the year. These conditions, which had the same course during the harvest, contributed to the high quality of the grapes and created excellent conditions for the expert teams for making and harvesting the grapes. The grapes were harvested from a special “terroir” at 500 meters above sea level. Each bunch is hand-picked and then placed in crates in order to select the best parts of the grapes, while having complete control over the fermentation process. The harvest was in the early morning
hours in order to preserve the aromas in their best condition.
Wine making:
- Grape crushing and de-staming.
- 24 hours cold maceration at 12 0 C
- 10 daily fermentation during which maceration takes place at 20-24 0 С degrees
- Complete “overhaul” is done twice
- Processes for clarification and stabilization of young wine
- Wine maturation in 4 types of oak barrels (Macedonian, French,
American and Hungarian) for a period of 12-18 months - The wine is left to develop in bottles for 8-12 months
Popova Kula[1] Winery is a family-owned winery located in the Tikvesh wine region of North Macedonia, near the town of Demir Kapija. The winery is known for producing high-quality wines from local grape varieties such as Vranec[2], Kratosija, and Temjanika, as well as international varieties such as Cabernet Sauvignon, Merlot, and Chardonnay[3].
