Acidia (acidity)

A general term associated with acidic and sharp taste in grape juice and guilt, caused by the presence of organic acids such as tartar, apple and citric acid. The acidity in the final wine can be the result of acidification. The acidity has important implications for the quality of the wine, as it affects the balance, freshness, preservation of color and aging, and also acts as a natural preservative.
